Cascade Harvest & Puget Sound Fresh’s “Pledge to Eat Local for Thanksgiving” campaign reduced carbon emissions equivalent to that of giving up your car for a year! (Plus a Thanksgiving recap)
Thanks to Cascade Harvest’s program Puget Sound Fresh & their campaign, Pledge to Eat Local for Thanksgiving, they reduced carbon emissions equivalent to taking a car off the road for a year!
Here’s how the math plays out:
3536 people took the pledge to have at least one locally grown food on their Thanksgiving table this year.
That resulted in the reduction of 7779 lbs of carbon emissions.
A gallon of gasoline in a car emits 19.4 lbs of carbon. Meaning a 12 gallon tank emits 232.8 lbs.
7779 lbs = 33.4 tanks of gasoline!
Based on a car filling its tank a little over twice a month, it’s the equivalent to one year of driving.
If these people eating one local dish, for one meal, one day out of the year can take a car off the road for one whole year, think about what we could do if we ate local once a month or once a week or even more frequently!

CRANBERRY SAUCE
In a medium saucepan, make a simple syrup (boil water and sugar until the sugar dissolves).
Reduce heat to simmer and stir in everything else.
Cover & simmer 30 minutes, stirring occasionally until cranberries burst.
Remove from heat & let cool.
*Can also be made in a crockpot overnight!
Everyone has some challenges and disappoints, right?
And the dessert has been left up to me, as I am the dessert-making queen. My standard pumpkin chocolate chip cookies, are everyone’s favorite, but I think something fancier may be in order…
And of course, almost everything will be local — sourced mainly from the Farmers Markets here, or my CSA box from Boistfort Valley Farm. Can’t wait!!!
