Cascade Harvest & Puget Sound Fresh’s “Pledge to Eat Local for Thanksgiving” campaign reduced carbon emissions equivalent to that of giving up your car for a year! (Plus a Thanksgiving recap)

You Ate Local & Eliminated a Car for 1 Year!

Thanks to Cascade Harvest’s program Puget Sound Fresh & their campaign, Pledge to Eat Local for Thanksgiving, they reduced carbon emissions equivalent to taking a car off the road for a year!

Here’s how the math plays out:

3536 people took the pledge to have at least one locally grown food on their Thanksgiving table this year.

That resulted in the reduction of 7779 lbs of carbon emissions.

A gallon of gasoline in a car emits 19.4 lbs of carbon. Meaning a 12 gallon tank emits 232.8 lbs.

7779 lbs = 33.4 tanks of gasoline!

Based on a car filling its tank a little over twice a month, it’s the equivalent to one year of driving.

If these people eating one local dish, for one meal, one day out of the year can take a car off the road for one whole year, think about what we could do if we ate local once a month or once a week or even more frequently!

Thanks Cascade Harvest!

CRANBERRY SAUCE

1 cup water
1 cup sugar
12 oz cranberries
1 orange, 1 apple, 1 pear
1 cup each: chopped, dried mixed fruit & chopped pecans
1/2t each: salt, nutmeg, ginger, allspice
1t cinnamon

In a medium saucepan, make a simple syrup (boil water and sugar until the sugar dissolves).
Reduce heat to simmer and stir in everything else.
Cover & simmer 30 minutes, stirring occasionally until cranberries burst.
Remove from heat & let cool.
*Can also be made in a crockpot overnight!

Everyone has some challenges and disappoints, right?

Thanksgiving Menu (so far)

  • Bison w/ a huckleberry-port sauce, all local except for maybe the port (Bison caught by my dear ol’ uncle)
  • Mashed Parsnips & Potatoes — twist on my childhood favorite
  • Walla Walla Fried Onion Rings — homemade!
  • Cranberry Relish, served with local crackers & cheeeeeeese
  • Some sort of Kale side dish (possibly w/ green beans & a homemade cream of mushroom sauce?)
  • Sweet potatoes that we’ve yet to decide on a recipe for. Will they be mashed? Sliced & fried? Cooked in puff pastry for appetizers? Who knows.

And the dessert has been left up to me, as I am the dessert-making queen. My standard pumpkin chocolate chip cookies, are everyone’s favorite, but I think something fancier may be in order…

And of course, almost everything will be local — sourced mainly from the Farmers Markets here, or my CSA box from Boistfort Valley Farm. Can’t wait!!!

My Sunday morning. Pumpkin cinnamon rolls (cinnamon, ginger & 1Tbsp sugar only things that weren’t local), Stumptown coffee, and the NY Times. Pretty perfect.

Hi Lola,
I retweeted your ELT video submission and then sent it to PCC where it was picked up on their FB and Twitter.
